If I'm being very honest, DK's defeat sprite is much better in here than arcade, in arcade he kept his same normal pose, his face was wackier but the restricted pose made him less expressive

Evidently this version was also gonna have new items and a cutscene of mario and Pauline sitting together.

No, they didn't. It seems these were newly made for the NES version.

Did the unique falling poses not exist in the arcade version?

Donkey Kong has more sprites than he has in the arcade version.
Something that could support this theory is how Pacman (which both have common inspirations for their power ups) had Intermissions
So it only makes sense DK devs would try to implement something as such
