Koopa Retro I was able to make out what Blaze's say sorta before and you're actually right, except it's not "Blaze is guardian of new and old."(because that would makes no sense) but rather "Blaze is guardian of the sol emeralds."
I now finally understand what it clearly says after all these years thanks guys!

You know, the text on the title cards has stumped me as well. Here's what I've gathered: "Use the wind. Sonic is to velocity of to sound."
