Yoshis only speak in English text (or whatever language the game is in) so that the player could understand whatever they say. When they got actual voices, they'd just say "Yoshi!" in a fashion similar to Groot from Guardians of the Galaxy or literally any Pokemon in existence.

@Devan2002 Before Yoshi's Story, Yoshi was less-humanoid and didn't even speak a language.
