He doesn't have one, he introduced himself as "Sans the skeleton", nothing more.
Skeleton is not a last name, it's just telling you what exactly he is.

@pacmastermeow I think the only thing new in this sheet is the southern-facing walk, otherwise, I don't see anything different either.
